Fresh, organic, and very nourishing cow's milk is the basis for this recipe. It is heated, pulled, kneaded, and stretched into a soft, smooth cheese curd that is infused with the wonderful flavours of the lush Abruzzo countryside. Gregorio Rotolo matures his caciocavollo in oak barrels for an additional year after allowing it to develop naturally for six months. The end product was an exceptional caciocavallo with a delightful and strong wine undertone. In order to keep the cheese wet, a layer of bran is placed on top of it. This gives the cheese a startling crisp flavour that is precisely what you are picturing in your mind.
