Italian farm-raised pigs' upper thigh, which is also used to create Parma Ham, is used to make culatello. It is salted and seasoned by hand.
The cut is wrapped in the pig's bladder after the animal is killed, tethered, and allowed to grow for many months in a humid environment throughout the hot summers and chilly winters that are typical of the Lower Parma region's climate.
