Produced from the top portion of the pig's thigh, this delicacy item is of the highest quality. There are only four ingredients in the salting mixture: salt, pepper, whole and broken, a little garlic, and dry white wine.
A reserve Culatello di Zibello DOP that was "lost" in the cellar for more than 36 months is called Culatello Platino degli Spigaroli.
