This buffalo cheese has blue veins and a raw curd, and it has a distinctive parallelepiped form. It is solely made using pasteurised buffalo milk. Its rind is dry and streaked with grey and amber. The paste, which is typically creamy and light yellow, includes some irregular voids and widely dispersed blue veins. It smells strongly like mould and ripe milk. Over aged, the cheese develops notes of mushroom and forest underbrush. The flavour is strong and lingering, and it is virtually always made sweeter by the characteristically fatty qualities of buffalo milk. It is aged for at least 90 days, although maximal sensory gratification is only achieved after six months.
