A semi-hard stretched curd cheese with medium to lengthy maturity. Provolone del Monaco PDO is sweet, buttery, and somewhat peppery. It is only made in the Lattari Mountains, in the province of Naples, and is distinguished by its distinctive flavour and the presence of holes of different sizes. At least 20% of the milk used in its production comes from Agerolese cow.
Only a natural cave is used for maturing, and it takes at least six months.
The protective consortium's certification mark confirms Provolone del Monaco PDO's authenticity.
